What do you do with fresh peaches and blueberries??
Make pie of course!!!
This is another super easy, quick and yummy recipe.
I picked up a Vegan pie crust from my local market (I was in a time crunch!)
3 1/2 sliced fresh peaches
1 cup fresh blueberries (set aside)
1 tsp vanilla
1 tsp cinnamon
1/4 – 1/2 tsp nutmeg (depending on your taste)
1/4 cup coconut sugar
Add peaches, spices and coconut sugar to a pot and bring to a low boil, stirring to coat the peaches with spices and mix in coconut sugar. After a low boil is achieved, turn off heat and gently stir in blue berries. Add mixture to pie crust and cook for 35-40 minutes at 350 degrees. Keep an eye on the crust so it doesn’t burn. If the edges start getting too brown, take foil and crimp around edges of crust and continue baking.
